About the product
Monteblanco Farm is a family-run estate managed by Rodrigo Sánchez Valencia. Nestled at a high altitude along the winding mountain roads of Vereda La Tocora in the municipality of San Adolfo, above the town of Pitalito, the farm continues a coffee-growing tradition started by Rodrigo’s grandfather. Spanning 18 hectares, Monteblanco sits atop a ridge, with its processing station located at the highest point—where the coffee is carefully refined and dried.
With every harvest, Monteblanco Farm produces microlots that are featured as competition coffees around the world. Thanks to meticulous attention to processing methods, the farm consistently achieves exceptional quality across all its coffees.
The selected variety for this coffee is Purple Caturra, prized for its versatility and high sugar content. These qualities create ideal conditions for beneficial microorganisms such as Lactobacillus and Saccharomyces cerevisiae. The microorganisms are first cultivated separately and then applied to the coffee.
A mother culture—crafted from fruit, citrus juices, and dehydrated coconut—is fermented for 190 hours until optimal sugar levels and pH are reached. The coffee cherries are then fermented in this solution for 180 hours, with careful monitoring of sugar concentration and pH throughout the process.
This innovative method enhances the coffee’s fruity flavor notes while preserving its natural character and terroir.
