About the product
We source this Costa Rican coffee directly from farmers, ensuring fair compensation and close collaboration with the farm. This direct-trade approach allows us to secure the highest quality beans while supporting sustainable farming practices—and ultimately, it just feels right.
Finca El Dragón is located in San Francisco, Costa Rica, at an elevation of 1850–1900 meters. The farm is run by Enrique Ardón and his wife Maricruz Jiménez. This beautiful region is known for producing much of Costa Rica’s finest coffee. The high altitude enhances the beans’ natural sweetness and flavor complexity, and the coffee is distinguished by its small bean size.
The coffee is processed using the Red Honey method, which retains 25–30% of the fruit mucilage before drying. Honey processing bridges the gap between natural and washed methods—offering the body and sweetness of naturals with the clarity and balance of washed coffees. Red Honey specifically delivers a rich, sweet profile with low acidity.
We roast this coffee for filter brewing, and it’s best described as sweet and balanced. Expect a nutty, milk-chocolate body, the sweetness of wild honey, and notes of dried fruit.
