About the product
A natural, spontaneous mutation of Maragogype and Catuai coffee plants. This exceptional coffee, which grows exclusively on this farm, was named by Pedro. The drooping plants reminded him of a traditional Japanese garment. The coffee has a truly sweet profile with minimal bitterness and a touch of acidity. We have changed the roast profile to Omni, making it suitable for both espresso and filter coffee lovers.
We source our specialty coffee from Guatemala directly from our friends at La Serrania farm. The farm is located in the El Progreso region, in the Sierra de Las Minas mountains. The highest part of the Sierra is a protected area covering approximately 100,000 hectares. Due to its exceptional biodiversity, it has been declared a UNESCO World Heritage Site.
The plantation is located in a rainforest environment characterized by dense vegetation and high humidity. The farm lies at an altitude of 1,400–1,700 metres above sea level. Most of the farm is planted with pine and Inga trees, which provide shade for the coffee plants, act as organic fertilizer, and help prevent soil erosion.
